Sweet and Smokey Vegetarian Quesadilla

Sweet and Smokey Vegetarian Quesadilla

This recipe is so simple to make and perfect if you are after a cheesy treat. The smoky spices work so well against the sweet peppers and the melted cheese, it really is a crowd pleaser.

You can add black beans or pulled chicken to the filling too if you fancy it.

The Recipe

Step 1

Finely slice your onion and add to a frying pan with a little olive oil on a medium high heat.

Step 2

Slice your peppers into thin strips and add them to the pan with around 1 tbsp of water. This will evaporate, but it will just help speed the process of wilting down the peppers.

Step 3

Add the spices, garlic and chipotle paste to the peppers and onions and cook until the onions are soft and translucent, frequently stir to ensure the onions don’t burn. (NOTE: Taste test your chipotle paste before adding it to your pan. The spice levels vary from brand to brand so adapt the quantity if you need, add more or less.)

Once the onions are fully cook, it should take around 10 minutes, remove the pan from the heat and add a squeeze of lime and season with salt and pepper.

Step 4

Add a tortilla to a dry pan, sprinkle a layer of cheese over the whole wrap, be generous here. Then layer on the onion and peppers mixture, top with another generous layer of cheese and place the second tortilla on top.

Place the pan on the hob and cook on a medium-high heat for a couple of minutes, then careful flip it over and cook for a further 2 minutes. This should make the edges nice and crispy and give the wraps a little structure, without turning them into crisp bread. The cheese will have all melted and will act like a glue.

Step 5

Carefully remove the quesadilla from the pan and cut into 6 triangles. Serve immediately with a fresh guacamole, jalapeños and lime wedges.

  • 1 red pepper

  • 1 green pepper

  • 1 large red onion

  • 2 cloves garlic

  • 1.5 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 1 tsp chipotle paste

  • 1 lime

  • 100g Emmental cheese - grated. (you can use any cheese here as long as it melts and be as generous as you like.)
