This is a got to recipe of mine because its super easy to make and is literally a bowl FULL of green goodness.. The courgettes and coconut milk give the soup a real creaminess, while the chilli, ginger and lime add that extra depth of flavour. I serve it with a drizzle of coconut yogurt, flaked almonds and chili oil for an extra kick.
The Recipe
Step 1
Add 1tbsp olive oil to a large stock pot on medium heat. Add the roughly chopped onion and celery, and chilli with salt and pepper and sauté for 3-5 mins. Add the garlic and chilli and cook for a further 3 mins.
Step 2
Add the chopped broccoli, courgettes and stock. Cook with lid on for around 10 mins.
Step 3
Add the peas, spinach and kale, return lid and cook for a further 2 mins.
Step 4
Remove from heat and blitz, I use a hand blender but you can equally just add everything to a normal blender.
Step 5
Add coconut milk and salt and pepper to taste. Serve with a drizzle of almond yoghurt, seeds and chilli oil

4 cloves garlic
4 sticks of celery
1 large white onion
Two inches of ginger
3 courgettes
1 large Broccoli flower
150g peas
Large bag of kale (around 250g)
Large bag of spinach (around 250g)
800ml veg stock
200ml coconut milk
Salt and pepper to taste
