Caramelised Onion Sausage Roll

Buttery, flakey pastry, filled with beautifully spiced sausage meat with a hint of sweetness from the caramelised onion, I really don’t think anything could sound better.

The Recipe

Step 1

Finely slice the onion and add to a hot pan with a little olive oil and cook until the onions become soft and translucent - around 5-7mins. Then add the honey, thyme, nutmegs and worcestershire sauce and cook for another couple of minutes until the onions have started to caramelise slightly. Remove from the heat and set aside.

Step 2

Squeeze the sausages out of their skins and into a bowl. Once the onion mixture has cooled mix into the sausage meat until fully incorporated.

Preheat oven to fan 200 degrees C.

Step 3

If the puff pastry is not pre-rolled, roll it out into a large rectangle, on a lightly floured surface, to the thickness of a pound coin.

Cut it lengthways into two long, even rectangles. Roll the mixture into sausage shapes with your hands and lay along the centre of each rectangle.

Step 4

Mix the egg and milk in a small bowl and brush the pastry with the egg wash.

Then fold one side of the pastry over, wrapping the sausage filling inside. Press down with your fingers to seal the join.

Step 5

Brush the pastry with the rest of the eggs wash and sprinkle with the poppy seeds. Use a sharp knife to cut it into the size of sausage rolls you want.

Place on a lined baking tray and bake for 20-25 mins until puffed up and golden.

  • 6 good quality sausages

  • 250g Rolled Puff pastry

    1.5 tsp dried thyme

  • 1 tsp honey

  • 1 tbsp worcestershire sauce

  • 1 red onion

  • Grating of nutmeg

  • 1 egg

  • 1 tbsp milk

  • 1 tbsp poppy seeds - for sprinkling
