Cinnamon Twisted Buns with Pistachios

A warm cinnamon bun is perhaps the best thing you could ever eat. The spices and the deep treacly, brown sugar work amazingly with the buttery dough. The pistachios not only look amazing with that pop of vibrant green, but just give another layer of flavour.

The Recipe

Step 1

Warm the milk either on the hob or in the microwave (only need 45 secs in the microwave) it should only be warm, not hot.

Add the 1/2 tbsp sugar and yeast to the milk, mix well and set aside for 5 minutes until it becomes foamy

Step 2

In a large bowl mix the foamy milk, egg, butter, cinnamon and sugar.

Now add the salt and flour and mix together. When the dough becomes too stiff to use a spoon, use your hands to bring the mixture together. Tip it out onto a lightly floured surface and knead into a smooth dough. it should be smooth and elastic.

If it feels a little sticky add a touch more flour 1tbsp at a time.

Form it into a ball.

Step 3

Grease a large bowl and place the dough inside, cover with cling film and leave in a warm place for about an hour, or until it has doubled in size.

Step 4

Meanwhile, make the filling.

Whip the butter and sugar together until light and fluffy and then add the cinnamon, mix again until fully incorporated.

Step 5

After an hour, tip the dough out onto a lightly floured surface and roll into a rectangle, around 0.5cm thick.

spread the filling evenly on the dough and then fold the rectangle in half lengthways, encasing the filling.

Use a pizza cutter or knife to cut the dough into strips around 2.5cm thick.

Tie each strip into a knot. Take one end between your finger and thumb and wrap it around your fingers twice and tuck it back through to form a twisted knot. This can be rough but try and ensure that the knot it relatively secure so they don’t unravel when cooked.

Step 6

Line a couple of baking trays and place buns on the trays leaving a decent amount of space between buns.

Cover and leave to rise again for about 30mins.

Step 7

Preheat oven fan 180 degrees C.

mix the egg yolk and milk together in a small bowl and brush each bun.

Bake for 15-18mins until starting to turn golden.

Step 8

While they are baking, make the simple syrup. Mix the sugar and water together in a saucepan. Bring it to the boil, then immediately reduce the heat to a simmer until you have a light syrup.

Step 8

As soon as the buns are cooked, remove from the oven and immediately brush with the syrup and sprinkle of the crushed pistachios or white sesame seeds.

 

The Ingredients

  • 120ml whole milk - warm

  • 50g caster sugar + 1/2 tbsp sugar (divided)

  • 1 large eggs

  • 7g active dry yeast

  • 3 tbsp butter - melted

  • 250g flour

  • 1/2 tsp salt

  • 1 tsp cinnamon

For the filling

  • 75g unsalted butter

  • 125 soft brown sugar

  • 2 tsp cinnamon

For the egg glaze

  • 1 egg yolk

  • 2 tsp whole milk

For the sugar glaze

  • 50g caster sugar

  • 50g water

Topped (optional)

  • crushed pistachios

  • white sesame seeds
