It's Uk Coffee Week, so it's only fitting we focus on all things coffee and cake. What better way to celebrate the perfect cup of coffee than pairing it with some of my favourite baked treats. The UK consumes over 400 billion cups of coffee per year, that's a lot of coffee. No cup of coffee should ever be drunk alone, that means we should have 400 billion snacks to choose too!
My aim has always been to bring you guys recipes that are not only utterly delicious, but are also the healthiest version they can be. I have always loved food and experimenting with flavour combinations, but my career as a model meant that I also needed to remain in shape. This made things a little trickier for me. It meant I had to experiment even more and try and create recipes which were healthy and nutritious, but without compromising on the flavour. If this meant making a recipe 50 times over to get the perfect balance of flavours, then that's exactly what I would do. This has been the case on many occasions, making my friends or family try my baking ….just one more piece of carrot cake, or…just one more version of a cookie.
So on that note am bringing you 3 of my favourite tried and tasted recipes that will hopefully bring a smile to your face.
Spiced Date and Sweet Potato Muffins
My sister actually claims these are her favourite thing that I've ever made! Bold statement I know, but even if I do say so myself, they are ridiculously good. Using sweet potato as a base not only provides an amazing flavour and texture to these muffins, but also it is a rich source of fibre as well as containing an array of vitamins and minerals including iron, calcium, selenium, and they're a good source of most of our B vitamins and vitamin C. If that wasn't good enough, sweet potatoes are also high in antioxidants and help support gut health.
The flavour combination is unbeatable, and the texture is perfect: They are incredibly moist in the centre and have a slightly crunchy exterior where the mixture has started to caramelise slightly.
Cinnamon, Oat and Raisin Cookies
Cookie texture is potentially even more important than the flavour, it has to have the perfect amount of crunch to gooey chew. I am proud to say that this cookie has it all. Not only is the texture flawless, but the flavour is the perfect amount of sweetness with the cinnamon. There is nothing better to enjoy with a cup of coffee.

Peanut Butter Cups
Potentially one of the easiest thing you can make to satisfy your sweet tooth. These really are so utterly delicious and so simple to make. These will be your new go to treat. You can make a big batch and keep some in the freezer for later.
If you are more of an almond butter lover, then feel free to use that - anything goes here. I use Mani Life deep roasted crunchy peanut butter - warning, this stuff is so addictive!
