The Recipe

Step 1

Prehet oven to fan 200 degrees.

Add two baking trays to the oven to heat up - round ones are best here, but if you don’t have round then rectangle is fine.

Step 2

Start by making the tomato sauce. (If you have sauce left over, it also works great as a pasta sauce. )

Peel the onion, cut it in half and slice it finely. Cook in a frying pan on a medium-High heat with a little oil. Cook for about 5mins until the onion has started to soften.

Chop the garlic finely and add to the onions, cook for another minute, then add the tin of chopped tomatoes, tsp of sugar and good pinch of salt. Simmer for around 5 mins to reduce the sauce slightly.

Blend the tomatoes to a smooth sauce in a blender/nutribullet. (Feel free to add a little chilli here too if you like the spice. )

Step 3

Mix all the ingredients for the dough together in a bowl. Measure out 100ml warm water, pour it into the flour and mix with a fork.

Once the mixture has started to come together, use your hands to incorporate all the flour. Bring it all together to form a smooth dough, if it feels a little dry add a little extra water until it became silky. If it is too sticky, simply add a touch more flour.

Knead the dough for a couple of mins.

Step 4

Split the dough into 2. On a lightly floured surface roll out each piece of dough into a circle and about 0.5 cm thick (try as get as close to a circle as you can - don’t worry if it’s not perfect - rustic is fine)

Remove the trays from the oven and wipe or spray a little oil on each tray. Add the pizza base to each tray and cook for 4 minutes.

After 4 mins, remove the trays from the oven and flip the pizza bases over (so the top becomes the bottom, and bottom becomes the top)

Add a good amount of the tomato sauce, leave a couple of centimetres around the edge as the crust.

Sprinkle with a little oregano then top with cheese and whatever other topping you are using. Return to the oven for another 8-10 mins until starting to turn golden brown.
