Miso Peanut Butter Sweet Potato

The Dish

Miso peanut butter sweet potato on smoky baba ghanoush

You can take the most simple ingredient like a potato and spice it up with a few simple ingredients and make it into an exciting dish.

The Recipe

Step 1

Preheat oven to fan 200 degrees.

Step 2

Cut sweet potatoes into equal sized chunks.  Drizzle with olive oil, salt and pepper and roast for 20 mins.

Step 3

Mix all ingredients for marinade together, remove potatoes from oven and pour over, mix well to evenly coat all the potatoes.  Return them to the oven roast for a further 10 mins until they start to caramelise.

Step 4

Serve on baba ghanoush or hummus, top with toasted flakes almonds, fresh red chilli and coriander.

 

The Ingredients

  • 2 large sweet potatoes.

  • 2 tbsp peanut butter.

  • 1 tbsp light Soy sauce.

  • 2 tsp Maple syrup.

  • 1 tbsp sesame oil.

  • 1 tbsp white miso paste
