So who isn’t guac obsessed? This is one of my favourite recipes and it has been perfected to be the best of the best. I always serve this with crispy tortilla chips or corn chips, and it’s a real crowd pleaser.
The Recipe
Step 1
Dice the onion into very small pieces. Cut the tomatoes into quarters or eighths and chop the red chilli super fine. The smaller the better here, and set aside.
Step 2
Roughly chop the coriander.
Step 3
Remove the avocado flesh from their skins, removing the stone, and roughly mash in a bowl with a fork to form a chunky mixture.
Step 4
Stir in the rest of the ingredients and season with a good amount of salt.
Tip
This recipe is best to serve fresh, otherwise the avocados turn brown.
Also great topped with a sprinkle of paprika or Tajin (Mexican lime and chilli salt)
For a chip alternative, cut tortilla wraps into triangles and bake in a hot oven for around 5 mins until crispy and turning brown.
The Ingredients
2 ripe avocados
1/4 a red onion
10-15 cherry tomatoes
Juice of 1.5 limes
Good pinch of salt
Large bunch of coriander
Half a red chilli with the seeds removed (optional depending if you like the spice)
