If American pancakes are your thing, this is the recipe for you. They are perfectly just slightly crunchy on the outside with a fluffy centre.
Swimming in maple syrup - as very pancake should be.
The Recipe
Step 1
Sieve the flour into a large bowl and mix in the baking powder and sugar.
Step 2
Whisk the eggs in a separate bowl. Make a well in the centre of the flour and stir in the egg. Gradually add the milk, add 1/3 at a time. The batter will be lumpy to begin with, but don’t worry, it will smooth out. This batter is relatively thick, as that is what allows the pancake to rise.
Step 3
Oil a non stick frying pan on a medium-high heat. Also grease a round cookie cutter, use one between 3-4 inches. Place the cookie cutter in the centre of the pan. add a couple of spoons of batter into the cutter, fill it about half way. Allow it to cook for about two minutes. The pancake will start to rise up the cookie cutter and you will start to see bubbles forming on the surface.
Step 4
Once you see the pancake has cooked through, you will notice this by seeing the edges of the surface turn a different colour, you can now turn it over - still in the mould. Use a spatular to carefully flip it, be careful as the mixture may still be runny on the surface. After a minute you can remove the cookie cutter, if it gets stuck - don’t worry - just use a knife to cut round the edges. Cook for about another minute, until golden coloured.
Repeat for the rest of the pancakes, making sure you grease the pan and cookie cutter in-between.
Step 5
Make the caramelised banana. Slice the banana. Add the butter to a non stick pan on medium hot heat. Add the banana and cook around 2 mins on each side until golden brown.
Step 6
Stack the pancakes, top with the banana, crushed pecans and maple syrup.

300g self-rasing flour
220ml oat milk (can use any milk here)
1.5 tsp baking powder
2 eggs
2 tbsp caster sugar
oil for frying

1 tbs butter
handful of pecans
maple syrup
