I am obsessed with granola; I could eat it all day long. Shop bought granola tends to have a high sugar content.  Making your own granola is super easy and lasts for weeks when stored in an airtight container.  This is a recipe you can play around with, don’t worry if you don’t have the exact ingredients, just put in whatever you fee like. I like to have it with coconut yogurt and lots of fresh berries, but its also perfect as a porridge topper, to have over smoothie bowls or just to eat straight from the jar!

The Recipe

Step 1

Preheat the oven 160 degrees C. 

Step 2

Coarsely chop the nuts and dates.  Add the oats, nuts, coconut chips, banana chips, chai seeds, cinnamon in a large bowl and mix.  

Step 3

Mix the coconut oil, nut butter and syrup in a separate bowl and pour over dry ingredients.  Mix well to ensure even coating.

Step 4

Pour granola mixture on baking tray and bake for 25-30 mins, stirring mixture every 5 mins to ensure even bake.  Add the goji berries, dates and raisins for the last 5 mins.  (if added before they will burn).

Step 5

Remove from oven, and leave to cool. 

 

The Ingredients

  • 2 cups Jumbo oats

  • 1 cup mixed nuts coarsely chopped (I use almonds, hazelnuts, pecans and macadamia nuts but feel free to use whatever you fancy)

  • ½ cup coconut chips

  • ½ cup banana chips 

  • ½ cup sunflower and pumpkin seed mix 

  • 10 dates coarsely chopped 

  • 1/3 cup raisins 

  • 1/3 cups goji berries 

  • 2 tbsp. chia seeds 

  • 2 tbsp. cinnamon 

  • 1 tbsp. coconut oil 

  • 1 tbsp. nut butter (I use pip and nut coconut and almond butter) 

  • 1 tbsp. coconut syrup (you can use any natural syrup here)

  • pinch of salt
