These healthy cookie dough balls literally take minutes to make and satisfy that sweet craving which I’m sure we all get, well I know I definitely do.  They only contain 5 ingredients, and in tis case simplicity is everything.  You can also make different variations using different types of nut butters to keep things interesting.   They are perfect for dessert, to add into frozen banana ‘nice cream’ or just to have as a snack between meals.  These are vegan, gluten free and paleo and UTTERLY DELICIOUS!

I like to make all my snacks myself as it ensures I know exactly what’s in them.  So many snacks you buy in the shops are filled with additives, stabilizers or hidden sugars.  Or if they aren’t filled with sugar, they contain sweeteners which are so harmful to the body and insulin levels.

The Recipe

Step 1

Add the oats to food processor or nutribullet and pulse into oats resemble flour texture. 

Step 2

Combine all ingredients in a large mixing bowl.  Use a spoon at the start but then I find using your hands is the best tool. 

(If you find the mixture to dry and crumbly, add a few splashes of water)

Step 3

Chill in the fridge for around 30 mins - longer if possible. Best stored in fridge.

Step 4

Roll into equal sized balls using your hands and store in an airtight container for up to 10 days. 

 

The Ingredients

  • 1 cup oats flour

  • 1 tsp vanilla

  • ½ cup nut butter (feel free to choose you favorite nut butter, I like to use cashew butter, or pip and nut coconut and almond butter)

  • 1 tbsp coconut oil

  • 3 tbsp maple syrup 

  • ¼ cup dair free choc chips 

  • Pinch of salt
