Spiced Banana Bread

A recipe which I have been perfecting for a while now.  Healthy banana bread has never tasted so good. The perfect amount of spices works amazingly against the natural sweetness of the banana with a little crunch from the nuts. Best served warm with ice cream or a dollop of yoghurt and some almond butter!  

Make sure your bananas are SUPER ripe here. If they aren’t you won’t get the full sweet, banana flavour, but if you really can’t wait for them to fully ripen, add a little extra maple syrup to ensure the banana bread is sweet enough.

The Recipe

Step 1

Add all ingredients apart from the pecans into blender and blitz till smooth.

Step 2

Stir in the coarsely chopped pecans.

Step 3

Pour into lined loaf tray and top with a banana slice lengthways for decoration. You can also sprinkle some oats or more crushed nuts for added decoration.

Step 4

Bake at fan 170 degrees C for 1 hour until knife comes out clean. (Banana sizes vary so bake time may differ slightly, if knife doesn’t come out clear return to oven for a further 5-10 mins). Leave to cool for at least 10-15 mins (I know this bit is hard)

 

The Ingredients

  • 1 cup oat flour. (blitz oats in nutribullet)

  • 1/4 cup ground almonds 

  • 3 EXTRA ripe bananas. (1 extra for decoration) 

  • 2 eggs 

  • 1/4 cup maple syrup. (Can sub for agave) 

  • 1 tbsp chia seeds.

  • 1 tbsp cinnamon.

  • 1/4 tsp ground ginger 

  • 1/4 tsp cloves 

  • Sprinkle of nutmeg

  • 2 tbsp coconut oil. 

  • 2 tbsp nut butter (I use pip and nut here – the new pumpkin spiced almond butter works AMAZING, but the coconut almond butter is great too.  Or you can just use any form of nut butter.) 

  • 1/2 cup pecans coarsely chopped.

  • 1.5 tsp baking powder. 

  • Pinch of salt.
