This is the perfect breakfast, brunch or even just a nice healthy and filling snack.
Layers of creamy non-dairy yoghurt, with a juicy berry compote and crunchy granola.
The Recipe
Step 1
Make the berry compote. Add berries, water, agave and lemon juice into a small sauce pan on a medium heat. Cook for around 5-7 mins, a little longer if using frozen berries. The juices will come out the berries; it will reduce and form a sticky consistency. Remove from heat and allow to cool.
Step 2
Use two glasses to serve the parfait. Layer a couple spoons of yogurt, then the berry compote and then a layer of granola. Continue to layer until glass is full.
Step 3
Top with a few fresh berries.
The Ingredients
1 cup yoghurt (I use dairy free, ‘the Almond collective’ coconut yoghurt)
1 cup granola.
For berry compote
1 cup mixed berries (can use frozen)
1 tbsp water
1 tsp lemon juice
2 tsp agave
