Moroccan spiced carrot dip

This dip is perfect to serve with pita, crudite or even just add a spoon of it onto of a salad, piece of meat or fish. The moroccan spices work really well with the natural sweetness of the carrots. its something a little different to having hummus and the vibrate orange really lifts a dish visually.
The Recipe
Step 1
Pre heat oven to 180 degrees C
Step 2
Add garlic cloves in skin to a roasting tray with a drizzle of olive oil and roast for 10 mins. This will cause the garlic to become like a sweet paste.
Step 3
Peel and roughly chop the carrots. Add to saucepan of boiling water, boil for around 7-10mins until soft.
Step 4
Remove garlic from oven and remove the skins, this should be easy and the garlic should almost be paste like. Add all ingredients in food processor and blitz until smooth.
Step 5
Serve topped with some toasted pine nuts, pomegranate seeds, chopped parsley and a drizzle of olive oil.
The Ingredients
4 large carrots
1 tsp cumin
1 tsp turmeric
1 tsp smoked paprika
1/2 tsp cinnamon
Sprinkle of nutmeg
3 clover garlic (roasted for 10mins)
Salt and pepper to taste
To serve:
Drizzle of olive oli
Pomegranate seeds
Toasted pine nuts
Pita bread
Small bunch of parsley
