I’m a huge coleslaw fan, but I am also aware that its probably not the healthiest thing to load your plate with. I’ve played round with a few ingredients and have found the perfect solution and I actually think its better than any slaw I’ve ever had. Perfect to serve as a salad topper, to vamp up any sandwich or with any meat. This will keep in the fridge in an airtight container for 2-3 days.
The Recipe
Step 1
Shred the cabbage and grate the carrots and set aside
Step 2
Mix all the other ingredients in a bowl.
Step 3
Pour off the carrot and cabbage and combine, season with salt and pepper.
The Ingredients
200g red cabbage
200g white cabbage
150g carrot grated
Dressing
3 tbsp plain yoghurt or almond yoghurt if dairy free.
3 tsp red white vinegar
2.5 tsp Dijon mustard (i like it to pack a punch so i always add a little extra)
2 tsp honey
