5 Ingredient breakfast cookies
Best for: Breakfast, snack, dessert
Serves: 8-10
Prep time: 5 mins
Cook time: 15 mins
These are great to make at the start of the week as a perfect and healthy grab-and-go breakfast. If I have the time, I like to have them with a dollop of coconut yoghurt and berry compote, but they are also great by themselves.
The Recipe
Step 1
Preheat the over to fan 180 degrees C.
Step 2
Add all the ingredients to a food processor and pulse to form a cookie dough.
Step 3
Use a tablespoon to take out one scoop of the mixture at a time and roll into balls and lay onto a baking tray lined with parchment. Pat down the balls to form cookie shapes.
Step 4
Bake for 15 mins until golden brown.
The Ingredients
1 cup oats
1 egg
1 ripe banana
1 tbsp cinnamon
½ cup dried fruit of your choice (I use dates and raisins)
