Simple salads are sometimes the most magical. When you get good quality tomatoes, there really is nothing better. This salad, paired with a beautifully cooked piece of fish, is just perfection.
The Recipe
Step 1
Slice the tomatoes into equal sizes. I like to use a mix of colours and sizes of tomatoes as they provide a slightly different texture and flavour - and also for aesthetic reasons.
Slice the onion into super fine strips.
Step 2
Mix the ingredients for the dressing together in a small bowl.
In a larger bowl add all the ingredients with a good amount of salt and pepper - tomatoes need a good amount of salt, as it really draws out the sweetness in them. Pour in the dressing and mix well.
Top with an extra sprinkle of sumac.

300g Mixed Heritage Tomatoes
Small bunch of Parsley - finely chopped
1/2 red onion
70g walnuts
100g pomegranate seeds
Zest of half a lemon
1 tsp sumac
Dressing
1.5 tbsp Extra Virgin Olive oil
1.5 tsp pomegranate molasses
1 tsp honey
salt and pepper
