This is hands down my favourite salad. The toasted pita chips just make it - yes we are talking bread IN the salad, honestly, I don’t think anything could sound better. There isn’t really much to say about this salad, apart from it goes with everything and that it’s utterly delicious.
The Recipe
Step 1
Preheat oven, fan 150 degrees.
Cut the pita into square small pieces, around 2cm squared. Drizzle in a little olive oil and bake for 10-15 mins until the pitas are fully crispy and just starting to turn golden.
Step 2
Slice the tomatoes into chunks and the cucumber into thin half circles. Thinly slice in the onion into strips.
Mix the dressing together in a small bowl. In a large bowl mix all the ingredients for the salad including the crispy pita chips. Pour in the dressing, season with salt and pepper mix well to evenly coat.
The Ingredients
1 heart of Romaine lettuce -chopped
1 cucumber
1/2 red onion
3 large heirloom tomatoes
Small bunch mint - chopped
Small bunch parsley - chopped
1 tsp sumac
2 pita breads
100g pomegranate seeds
Dressing
2 tbsp Extra Virgin Olive oil
Juice of half a lemon
1 tsp honey
salt and pepper
