There is nothing more comforting than a bowl of pasta. This is one of my favourite pasta dishes, it takes minutes to make and is so fresh and delicious. The perfect summer pasta dish!

The Recipe

Step 1

Finely dice the shallot and add to a large pan with a little olive oil and cook until the shallots are soft - around 5 minutes.

Step 2

Finely dice the tomatoes and chilli. Add the garlic, chilli and tomatoes to the pan and cook for a further couple of minutes.

Step 3

Put the pasta on to cook - add a good amount of salt to the water. Cook per packet instructions, if you are using fresh pasta cook that last minute as it needs hardly any cooking.

Add the wine and allow to cook on a high temperature for a couple of minutes to allow the alcohol to burn off.

Then reduced the heat to a gentle simmer and add the cream, crab meat and chopped herbs and mix well.

Step 4

Now add the cooked pasta and a little of the pasta water. Season well with a good amount of salt, pepper and a squeeze of lemon.

 

The Ingredients

  • 300g white crab meat

  • 2 large banana shallot

  • 3 garlic cloves - minced

  • 2 red chillies - seeds removed

  • Bunch parsley - around 25g

  • Bunch of coriander - around 15g

  • 15-20 cherry tomatoes

  • 100ml single cream

  • 150ml dry white wine

  • 500g lingine
