Simplicity is sometimes exactly what you need, and this dish is precisely that. The sweet, crisp watermelon works so well against the salty, creamy cheese, all lifted with the freshness of the mint and a crunch from the nuts.
The perfect accompaniment for any BBQ.
The Recipe
Step 1
Dice the water melon into cubes - around 2cm squared. Crumble in the feta and add the oil and vinegar and mix well. Season with a little salt and pepper.
Step 2
Toast the pinenuts in a hot dry pan and cook for a couple minute until they just start to turn golden brown.
Step 3
Roughly chop the mint and add the the salad with half the pinunuts and mix well. Top with the rest of the pinenuts and serve.

450g watermelon
200g feta
Small bunch of mint
40g pinenuts
1 tbsp good quality olive oil
1/2 tbsp balsamic vinegar
Hazelnut pesto
La
